Undone Stuffed Pepper Casserole



I have been into Quinoa lately! So, I redid this recipe from Kraft to include Quinoa.  SO good! :)

Ingredients:

1 lb. lean ground beef or venison
2 green or red peppers, coarsely chopped
3 cloves garlic, minced (I used Tastefully Simple Garlic Garlic)
2 cups cooked Quinoa
1 jar spaghetti sauce
1.5 cups of shredded Italian cheese

Brown meat with peppers and garlic in large skillet, drain. Stir in quinoa, spaghetti sauce, and half of cheese. Spoon into 2-qt casserole dish and top with remaining cheese.

Bake at 350 degrees for 25 minutes.

Chicken 'N Peppers Pasta Skillet

Quick, Easy, and Delicious! :)


Chicken 'N Peppers Pasta Skillet
Adapted from Kraft Foods

Ingredients: 
2 cups multi- grain penne pasta, uncooked
1 lb. boneless skinless chicken breasts cut into bite-size pieces
1 large green pepper chopped
1 large red pepper chopped
1 small onion, chopped or Tastefully Simple Onion Onion
2 cups spaghetti sauce
1 cup shredded mozzarella
2 tbsp grated Parmesan Cheese

Directions:
Cook pasta as directed on package.  Meanwhile, heat large skillet sprayed with cooking spray on medium-high heat.  Add Chicken and cook/stir for 2 minutes.  Then, add vegetables, cooking 6-8 minutes until chicken is done and vegetables are crisp-tender. 

Drain pasta and add to chicken mixture along with sauce.  Cook 5 minutes.  Remove from heat.  Top with mozzarella and let stand for 1-2 minutes until cheese is melted. Top with Parmesan.

Black Bean and Corn Quesadillas


I made these babies for dinner tonight. Fast and SO tasty! :)


Black Bean and Corn Quesadillas
Adapted from Budget Bytes

Ingredients:
1 can (15 oz) black beans (drain and rinse)
1 cup frozen corn kernels (no need to thaw)
1 clove garlic minced (or one tsp Tastefully Simple Garlic Garlic)
1/2 small red onion (or a few sprinkles or Tastefully Simple Onion Onion)
Taco Seasoning or Tastefully Simple Fiesta Party Dip (to taste)
2 cups shredded cheese (I used Kraft 2% milk reduced fat Cheddar)
1/4 bunch fresh cilantro chopped
10 taco sized tortillas

Combine all ingredients other than tortillas in large bowl.
Spoon 1/2 cup of mixture on 1 tortilla and fold in half.  Cook in skillet on both sides over medium heat until brown and cheesy filling is melted!

Grilled Bruschetta Chicken

This recipe was one of my first ever Pins on Pinterest!  I have made it for friends and family. They all love it! :)




Grilled Bruschetta Chicken

4 small boneless skinless chicken breast halves 
1/2 cup KRAFT Sun-Dried Tomato dressing, divided
2 tomato, finely chopped
1/2 cup shredded part-skim mozzarella cheese
1/4 cup chopped fresh basil or 1 tsp. dried basil leaves


Place a large sheet of heavy-duty foil over half of grill grate; heat grill to medium heat. Meanwhile, place chicken in resealable plastic bag. Add 1/4 cup dressing and seal bag. Turn bag over several times to evenly coat chicken with dressing. Refrigerate 10 minutes (I marinate it all day if I remember in time). Remove chicken from bag; discard bag and dressing.


Grill chicken on uncovered side of grill for about 6 minutes. Meanwhile, combine remaining 1/4 dressing, tomatoes, cheese and basil.


Turn the chicken over and place cooked-side up, on foil on the grill. Top with tomato mixture. Close lid. Grill 8 minutes or until chicken is done.

Skinny Funfetti Cupcakes with Marshmallow Frosting


These are SO delicious and SO easy!  Ready?


3 ingredients:






Blend Cupcake Mix with 12 ounces of Diet Cherry 7-Up.

Scoop into Muffin Pan.  Bake at 350 for 15 minutes.  Take out and place 1 marshmallow on each cupcake. Bake for 5 more minutes.


Makes 20-24 cupcakes.


Only 112.5 calories each!!! :)

Taco Soup

This soup is amazing... and low in fat and calories... and extremely easy to make!! I love it! :)




Taco Soup

1 can of chicken broth
1 can of corn
1 can of fat free re-fried beans
1 jar of Salsa
1 can of black beans
1 can of chicken (or 1.5 cups of cooked and chopped chicken)
Optional: Taco Seasoning or Tastefully Simple Fiesta Party Dip to taste


Mix together and heat on stove!  That's it! :)



Chocolate Chip Cookie Pie

So, I think this first post needs to explain the title of my blog... :)  I was inspired by Chocolate Covered Katie.  She modifies and creates amazing desserts that are much healthier and SO delicious.  One of the recipes I tried is Healthy Deep Dish Cookie Pie.   It has the most surprising ingredient... Chickpeas!!  I have recently become obsessed with Chickpeas!  They are so yummy and versatile (hummus, roasted chickpeas, in a pasta dish, in a salad)  Never would I have thought to put it in a chocolate dessert!  But I did, and it turned out amazing!



I followed Chocolate Covered Katie's recipe: (The italics are my notes)

Deep-Dish Cookie Pie
  • 2 cans white beans or garbanzos (drained and rinsed) (500g total, once drained)
  • 1 cup quick oats (or certified-gf quick oats)
  • 1/4 cup unsweetened applesauce
  • 3 T canola oil
  • 2 tsp pure vanilla extract
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 and 1/2 cups brown sugar
  • 1 cup chocolate chips
Blend everything (except the chips) very well in a good food processor (I used my food processor to blend the chickpeas and oatmeal and then transferred to a bigger bowl and blended the rest of the ingredients). Mix in chips, and pour into an oiled pan (I used a normal pie pan.) Cook at 350F for around 35-40 minutes. Let stand at least 10 minutes before removing from the pan.

Note: I am currently trying to loose weight and get fit, so this blog will have mostly low fat/low calorie dishes.   I will always include the nutritional values. (calculated by SparkPeople)   I must say this particular recipe is a little naughty.. but it's SO good! :)  According to Chocolate Covered Katie, it is still better for you than the traditional pie which is 700 calories per slice!  Plus, you get all the nutrition of the chickpeas! :)
