I followed Chocolate Covered Katie's recipe: (The italics are my notes)
Deep-Dish Cookie Pie
- 2 cans white beans or garbanzos (drained and rinsed) (500g total, once drained)
- 1 cup quick oats (or certified-gf quick oats)
- 1/4 cup unsweetened applesauce
- 3 T canola oil
- 2 tsp pure vanilla extract
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1/2 tsp salt
- 1 and 1/2 cups brown sugar
- 1 cup chocolate chips
Blend everything (except the chips) very well in a good food processor (I used my food processor to blend the chickpeas and oatmeal and then transferred to a bigger bowl and blended the rest of the ingredients). Mix in chips, and pour into an oiled pan (I used a normal pie pan.) Cook at 350F for around 35-40 minutes. Let stand at least 10 minutes before removing from the pan.

Note: I am currently trying to loose weight and get fit, so this blog will have mostly low fat/low calorie dishes. I will always include the nutritional values. (calculated by SparkPeople) I must say this particular recipe is a little naughty.. but it's SO good! :) According to Chocolate Covered Katie, it is still better for you than the traditional pie which is 700 calories per slice! Plus, you get all the nutrition of the chickpeas! :)
I gotta say, thank you for saying this is 10 servings! I was reading though the comments at CCK, and it said ~200 cals per serving, so I'm thinking wow...that's pretty awesome. Then I noticed that that was calculated for 20 servings per pie! Wowza...and the one I made, I cut into 8 slices...oops ;)
ReplyDeleteLoL yea.. 20 pieces is unrealistic! I think when we cut it at your house we did 8 too! But when I put 8 in the calc I was not happy with the calorie count so I changed it to 10! Will def have to b more careful how much I eat of it next time I make it!!
DeleteMe too! I took some for lunch the other day thinking of how healthy it was and that I'm getting veggies, and then I realized how high calories my slice was. Oh well...it still tastes good :)
