Mexican Quinoa Casserole
1 C dry quinoa
2 C black beans, rinsed
1 1/2 C salsa
3/4 grated cheddar cheese
1 T cumin (I used 1 T of Tastefully Simple Fiesta Party Dip Mix instead - gave it a kick! :))
1 egg or 1 T ground flaxseed in 3T water)
Preheat oven to 350. Cook quinoa according to instructions. In a casserole dish, combine the quinoa and black beans. Mix together the remaining ingredients in a bowl, using only half of the cheese. Pour over the quinoa mixture and sprinkle the remaining cheese on top. Bake 25 min.
